Daiginjo (Ricewine)

This is a type of Japanese rice wine- a beverage made by distilling and fermenting polished rice to make wines that are 18%-25% in alcohol volume. Considered to be the most prized bottling of the sake brewery, this special wine is made up of rice, water, koji mold, yeast and a portion of distilled alcohol and must have a minimum of 50% of the outer rice layers polished away.
