Stone fruits, or drupes, are fruits that have an inner stone/pit that is surrounded by the flesh of the fruit, such as apricots and cherries. Freshly-picked stone fruit can be used to make wines when paired with the rights grapes before carrying out the winemaking procedure. Stone fruits are also often used to flavour spirits and liqueurs.
