This type of dessert wine is produced from grapes that are frozen while still on the vine. This freezes the water, but not the sugar, allowing a small amount of concentrated juice to develop after must is pressed from the frozen grapes. While often served in smaller dessert wine glasses, ice wine can benefit from being served in a regular white wine glass in order to fully reveal its aromas.
