Auslese (sweet)

Since 1787, 'Auslese' has been a German term used to describe white grape wines made from grapes that were picked later than the general harvest. Grapes for an Auslese wine are hand-picked due to their ripeness. Various Ausleses match well with hard cheeses or fruits, though the dessert should never be sweeter than the drink.
