Cava
Coming in the form of white or rosé sparkling wine, this Spanish sparkling wine is of Denominación de Origen status. Made from native grapes such as Macabeo, Parellada and Xarel-lo, Cava is largely produced in Spain's northeastern Penedés region. Cava is made in the same way as Champagne and is known for its acidity and freshness, while also holding a rubbery, smokey character.
