Blanc de Noirs

Blanc de Noirs' describes a white wine produced completely from black skinned grapes from which the grape juice is obtained after minimal contact with the skins, resulting in a yellow-coloured white wine. When used in a Champagne-making context, the only grapes permitted for use are the Pinot Noir and Pinot Meunier grapes, which tend to come from the more southerly vineyards of the Champagne region.
